There are dozens of ways I could answer this. Clubbing is easier as the coolest places are generally in Milan with a handful in Rome as far as city clubs go. The best beach clubs are either on the Sicilian island of Panarea or in Sardinia on the Emerald Coast in the North. When it comes to amazing cities to visit, I would stick with Siena (and dozens of surrounding smaller Tuscan towns), Catania, Rome, Milan, Florence, Venice and Noto in Sicily. But the issue is that you can literally spend a whole month just in Tuscany or Sicily and see jaw-dropping places. Depends on what you're looking for - a nature-ish adventure or classic city tours. Food will be amazing everywhere.
Clubs have been closed for a little while now but are slated to open up this weekend. Planning on hitting Milan in a few weeks but will have to check out Panarea. Are there any clubs you've been to that are completely unique? I have a friend who went to a very underground club in Germany where they didn't allow phones at all and it forced people to enjoy and live in the moment. Doesn't even have to be that unique honestly just any go-to clubs I should see in Rome and Milan?

Plenty of great clubs across other European cities, but within Italy Rome and Milan are the best you get for city clubs.
Anywhere in France! Paris is a given, but on my last trip I found myself really liking Bordeaux and Lyon. Bordeaux is like a mini Paris, and is super quaint and lovely. Very pedestrian friendly, with an amazing wine culture. Nothing beats touring and doing a wine tasting at a classic chateau. Lyon is the food capital of France and every meal is unforgettable. I remember even having a burger with a glass of wine was delicious, and the more regional cuisine is outstanding.

Italy

- Barcelona: Just Google Ramblas and look at the party scene if that's what you're looking for

- Budapest: Szechenyi Spa & Baths... Night spa parties. If I were in my 20s and not 30s, I'd run to this and never look back. Also, the city is amazing
There are others (Switzerland, Croatia, etc.) that also have what you're looking for. Tough to go wrong in Europe.
If you go to Ireland (Republic of), do not refer to it as part of the UK. You'll piss people off.
